Homemade Turkey Burgers with BBQ Tomato Relish, Beef Tomatoes & Lettuce

Serves 6

Ingredients:

  • 2 tbsp oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 85g porridge oats

  • 450g/1lb turkey mince

  • 100g dried apricots (finely chopped)

  • 1 medium carrot grated

  • 1 egg, beaten

  • 6 rolls

  • 1 beef tomato

  • 90g shredded lettuce

  • Salt & pepper to taste

Method:

1. Heat oil in a pan and gently fry the onion for 5 minutes until soft, add chopped garlic and cook for a further 1 minute, add oats and fry for 2 minutes, then set aside to cool.

2. Add turkey mince, chopped apricots, grated carrot, beaten egg, salt & pepper.

3. Heat oven to 200c/fan 180c/gas mark 6. Heat the remaining oil and cook burgers on both sides for 3 to 4 minutes on each side. Transfer to a baking sheet and cook in the oven for 10 -15 minutes.

4. Wash tomatoes and lettuce, and then thinly slice tomatoes and lettuce.

5. Build your burgers in a bun - BBQ tomato relish, turkey burger, sliced tomato & shredded lettuce.

BBQ tomato relish

Makes 175g of relish

Ingredients:

  • 1 tsp. oil

  • 1 small red onion, finely chopped

  • 200g tomatoes, roughly chopped

  • 1 garlic clove, finely grated

  • 1 tsp sweet smoked paprika

  • 1 tbsp tomato puree

  • 1 tbsp red wine vinegar

  • 1 red chilli, finely chopped (optional)

Method

1. Heat the oil in a saucepan over a medium heat and cook the red onion, for 5 mins until slightly softened.

2. Add the chopped tomatoes, garlic clove, sweet smoked paprika, tomato purée, red wine vinegar and red chilli, if using. Season and simmer for 15-20 mins until the mixture has cooked down and thickened slightly.
