Prep time: 15 minutes / Cooking time: 10-15 minutes
Serves 4
INGREDIENTS:
200g Self-raising flour
200g Greek yoghurt
Pinch of salt
Additional flour for kneading
UTENSILS:
Medium sized mixing bowl
Fork
Rolling pin (optional)
Frying pan
METHOD:
1. STEP ONE - Add the flour, yoghurt and a pinch of salt in a medium sized mixing bowl. Mix with a fork until it comes together.
2. STEP TWO - Sprinkle some flour on to a clean work surface and tip the dough from the mixing bowl on it. Start kneading the dough, adding a sprinkling of flour as needed to prevent dough from being too sticky. Knead for 10 minutes.
3. STEP THREE - When the dough is smooth and stretchy, divide the dough into 4 or 6 pieces (depending on the size you want the flatbreads to be). Using your hand, roll the pieces into balls.
4. STEP FOUR Using a rolling pin or something similar, roll those balls out until thin.
REMEMBER to flour your work top again and the rolling pin whilst rolling out the dough!
TOP TIP – if you don’t have a rolling pin, or similar, you could try stretching the dough with the heel of your hand.
5. STEP FIVE - Now you’re ready to cook them. Heat up a large frying pan to a medium to high heat. When the pan is hot add a flat bread (or two if the pan is large enough) and leave them to cook. You’ll know when to turn them as bubbles start forming on the top after 1 to 2 minutes. Turn them over and cook them for a further minute until the start to change to a golden brown.
6. STEP SIX - Repeat the cooking process until they’re all cooked.

GO MOROCCAN - add 1 tsp of fennel or caraway seeds to the flour and salt at step one and mix well. Then add the yoghurt and 1 tbsp honey.
SERVING SUGGESTIONS & INSPO
Best served warm, straight out the pan but they can be warmed up in a microwave on high for 10 to 15 seconds or 3 – 4 minutes in an air fryer.
Ideal for parties or snacks. Cut them into wedges and serve them with dips like hummus or salsa.
Once cooked, add your favourite pizza toppings and cheese and bake them in the oven or air fryer for 10 minutes
If you don’t want to GO GARLIC in the mixture, why not warm a little butter, crush or chop some garlic and fresh herbs, let it sit for a minute and then brush the top of your flatbreads.
