Garlicky Potato, Spring Onion & Cheddar Frittata

This fun frittata recipe includes cheese, potatoes and veggies and is great as a nutritional family meal that be eaten hot or cold. A Frittatas versatility means it’s ideal for picnics and parties too.

Did you know a Frittata is an Italian baked egg dish? Think quiche without the crust.

Prep time: 10 minutes / Cooking time: 1 hour

Serves 4-6

INGREDIENTS:

  • 4 tbsp vegetable oil

  • 750g of baby potatoes

  • 3-4 garlic cloves, finely chopped or crushed

  • 1 bunch spring onions, thinly sliced

  • 8 eggs

  • 50g grated cheddar

  • Salt and pepper

UTENSILS:

  • Sharp knife

  • Table fork

  • Chopping board

  • Frying pan with lid

  • Medium saucepan

  • Small bowl

  • Garlic crusher, optional

  • Large spoon

  • Cheese grater, optional

  • Large oven proof dish

METHOD:

1.     STEP ONE - cook the potatoes in boiling water until tender but still firm. This usually 20 – 30 minutes depending on the size of the potato. Drain and when cool cut the potatoes into thick slices or chunks.

2.     STEP TWO – heat the oil in a frying pan and add the cooked sliced/chunks of potatoes and gently fry for a few minutes until they start to go golden.

3.     Step Three - add the chopped or crushed garlic and sliced spring onions and cook for a further couple of minutes.

4.     STEP FOUR - in a bowl, beat the eggs with a fork with some salt and pepper.

5.     STEP FIVE - take a large ovenproof dish (needs to have some depth) and grease it very well with oil or butter. Put the potatoes & spring onion mix at the bottom of the dish. Pour the eggs on top of the potatoes & onions. Sprinkle the grated cheese on top. Top Tip - if you do not have an oven, you the frittata can be cooked on the stove in the frying pan. To speed up the process cover the frying pan with a lid. 

6.     STEP SIX - place in the oven at 180°C for 20 to 25 minutes and cook until firm. Set aside when cooked and leave to rest for 10 minutes.

OPTIONAL EXTRAS

  • GO HERBTASTIC - add some fresh or dried herbs to the egg mixture for an extra burst of flavour.  

  • GO EXTRA CHEESY – use any hard cheese you have in the fridge instead of the cheddar or why not mix it up and have two types of cheese!

SERVING SUGGESTIONS & INSPO

  • This dish is great served with a selection of salads

  • If you’re short for time, skip STEP TWO! It won’t taste as good but sometimes needs must!

  • Do you ever have left over veggies or potatoes from a previous meal that you don’t want to waste? This is a great recipe to use those up! Saves on food waste and your budget!
