Prep time: 30 minutes / Cooking time: 10 - 15 mins

Serves 4

INGREDIENTS:

  • 200g self-raising flour

  • 200g Greek yoghurt

  • 3 tbsp vegetable oil

  • 1 small onion, finely diced

  • 2 garlic cloves, finely chopped or crushed

  • 400g tin chopped tomatoes or tomato passata

  • ½ tsp Italian herbs, basil, or oregano

  • 120g grated cheese

  • Salt and pepper

  • Suggested toppings: sliced peppers, sliced mushrooms, red onion, sweetcorn, tuna, sliced ham, sliced chicken – the possibilities are endless!

UTENSILS:

  • Tin opener

  • Sharp knife

  • Medium sized mixing bowl

  • Fork

  • Rolling pin (optional)

  • Frying pan

  • Garlic crusher (optional)

  • Flat pizza tray

  • Cheese grater, if grating the cheese yourself

METHOD:

1.     STEP ONE – THE TOMATO SAUCE

Add oil to frying pan, add the finely diced onion and cook on low heat until soft, add the finely chopped or crushed garlic and cook for a couple of minutes. Add the chopped tomatoes, herbs and seasoning and cook on low heat for 15-20 minutes. Remove from the heat

2.     STEP TWO – THE DOUGH PIZZA BASE

Use the flatbread recipe until the step three. Roll out your dough and add to your pizza base to flat tray.

If you do not have a round tin use whatever oven tray you have available as long as it is big enough to fit the dough.

3.     STEP THREE – BUILDING YOUR PIZZA

Spread tomato sauce (half of the sauce you made should be enough) on the base, sprinkle the cheese and add the toppings.

4.     STEP FOUR – COOKING

Cook at 220°C for 10-12 min. You need to make sure you cook it in a very hot oven, otherwise the bottom of the base will not cook enough, and you will end up with a soggy bottom!

Once cooked, cut into slices and serve.

SERVING SUGGESTIONS & INSPO

GO BASIC TOMATO - The basic tomato sauce in this recipe is very versatile, double or triple the amount when you make it. It freezes very well and defrosts quickly. It is a lovely sauce to make a quick pasta dish, or you can add some chunks of cooked sausages and will be lovely on top of a jacket potato. Roast some veg, mix them with the tomato sauce and serve them with some rice, yummy too. Also, if whole tinned plum tomatoes are cheaper, use a potato masher and mash them into pieces rather than buying chopped tomatoes or passata

GO INDIVIDUAL - If your family likes different toppings, divide the dough in 3-4 and make smaller pizzas with different toppings to suit everyone’s tastes. Just remember that smaller pizzas will cook quicker.

GO VEGGIE OR MEAT FEAST - You can add any toppings you like, different veg, pineapple, olives, bits of bacon, pepperoni, ham, sliced sausages… have fun with it.

ON THE SIDE - A side salad would go lovely with it.
