Poached Eggs in Spicy Tomato Sauce

We love a one pot taste sensation recipe, and we’ve most definitely cracked it with our poached eggs in a spicy tomato sauce. Delicious, tasty and simple to make for any time of the day.

Prep time: 5 minutes

Cooking time: 30-35 minutes

Serves 4 people

INGREDIENTS:

  • 2 tbsp vegetable oil

  • 2 onions (white or red), finely chopped

  • 1 red chilli, finely chopped

  • 2 garlic cloves, finely chopped or crushed

  • 2x 400g tins of chopped tomatoes

  • 4 eggs

  • Salt and pepper

UTENSILS:

  • Sharp knife

  • Chopping board

  • Frying pan with lid

  • Tin opener

  • Garlic crusher, optional

  • Large spoon

 METHOD:

1.     STEP ONE - finely chop the onions, chilli and garlic. TOP TIP – Role the fresh chilli on the counter to loosen seeds inside and then discard the seeds to make it less spicy.  REMEMBER, always wash hands thoroughly after handling fresh chillies.

 

2.     STEP TWO - Heat the oil in a large frying pan, add the finely chopped onions and cook on medium heat until soft. Then add the finely chopped garlic and chilli and cook for a further couple of minutes.

3.     STEP THREE - add the chopped tomatoes and bring to a gentle simmer. Leave them to cook for 10-15 min or until it starts to thicken. Season to taste.

4.     STEP FOUR - using the back of a spoon, make 4 wells (dips) in the tomato sauce and crack an egg in each one. TOP TIP - when poaching egg, crack them into a small container first and then pour the egg into the tomato sauce.

Cover with a lid and cook on low heat until the eggs are no longer translucent and cooked.

5.     STEP FIVE - divide the eggs and sauce on to your serving plates or bowls.


OPTIONAL EXTRAS

GO VEGTASTIC – add any vegetables to the tomato sauce such as peppers, mushrooms, courgettes or aubergines. Dice the veggie into small pieces and cook with the onions at STEP TWO.

GO EXTRA SPICY – Give the dish an extra twist by adding some spices like cumin, paprika, harissa or even some fajita mix seasoning.


SERVING SUGGESTIONS & INSPO

  •       If your family doesn’t do ‘spicy’, don’t add the chilli! Perhaps add some herbs instead such as basil, oregano or mixed herbs.

  •       Our flatbreads, see recipe is an ideal accompaniment and fantastic for dipping.
